Summer is officially here, so it's time to kick back, relax and enjoy the hazy evenings with a delicious rum cocktail. Other trendier drinks have come and gone, but rum remains a firm favourite for the warmer weather. 2 ½ cups pineapple juice
1 cup ice
⅓ cup passion fruit pulp (or puree)
2 cups ginger ale, chilled
In a blender, add the pineapple juice, rum and ice. Blend until smooth and pour into a pitcher or punch bowl.
Add the passion fruit pulp or puree (either will work) and the chilled ginger ale. Stir to combine and keep chilled.
When ready to serve, pour in cocktail glasses and garnish with a lime, or pineapple slice and top with additional passion fruit pulp if you like.

10ml of Tamar Tipple Coconut Rum Liqueur
300ml of pineapple juice
100ml coconut cream
Pineapple wedges to garnish
Fill a shaker with ice, and add all the ingredients.
Give a good shake, about 20-30 seconds.
Pour into a glass, ice included, garnish with pineapple wedges and serve!

1/2 overripe banana OR 1 whole baby banana
1/2 cup mango chunks, frozen is best
A splash of vanilla syrup
Chop up your fruit and throw all of your ingredients into a blender.
Pulse until it reaches your desired consistency.
Garnish with some mango chunks on a cocktail sword and enjoy!
